Since this recipe for gluten free stuffing is pretty “plain Jane” why not add some extras leftover from other holiday season recipes such as: dried cranberries diced sweet potatoes diced parsnips cooked chorizo sausage like in my Gluten Free Stuffing Recipe with Chorizo, Squash & Apples cooked Italian sausage I think you could add a cup or two and not overflow the casserole dish
